
Chicken Curry Recipe from Jamaica
Today I offer you a recipe that a friend of mine sent me from Jamaica. It is a delicious dish and should not be particularly heavy when compared to other types of food.
Ingredients
- 2 1/2 pound(s) chicken (breast would be better);
- 2 shallot stalk(s), minced;
- 3 sprigs of thyme;
- 1 medium onion, chopped;
- 1 medium carrot, chopped;
- 1 small Irish potato, diced;
- 4 clove(s) of garlic, minced;
- 1 teaspoon black pepper;
- 1 teaspoon salt or to your taste;
- 2 teaspoons of chicken seasoning;
- 1 teaspoon MSG;
- ½ scotch bonnet pepper, crushed;
- 1 tablespoon(s) curry powder;
- 3 tablespoon(s) vegetable oil;
- 2 1/2 cup(s) of water;
Preparation
- Remove skin and cut chicken into bite-sized pieces and wash in a mixture of white vinegar and water.
- Season the chicken with chopped shallots, onion, garlic, black pepper, salt, chicken seasoning, MSG and chopped scotch bonnet pepper. Cover and leave to marinate in the fridge for about 1 hour or overnight if preferred.
- Heat the cooking oil in a heavy frying pan, add the curry powder and leave to cook or as we call it ‘burn’ for about 1 minute.
- Add the seasoned chicken and cook, stirring, for about 5-10 minutes.
- Pour in the water, carrot, Irish potato and thyme, stir then cover and leave to cook for about 40 minutes.
Considerations
If the water runs out, add more water gradually to prevent the meat from burning. Serve with white rice. You can also adjust the seasoning to your liking, you may need less or more, it's really whatever you like or prefer.
